With more than three decades of experience in analytical food testing, Liz Bratisax has thoroughly honed her expertise in analytical assessment and ingredient functionality. She brings her experience and skills to her position as manager of analytical services in Bimbo Bakeries USA’s research and development department. Her role involves the outsourcing of new ingredients and finished products, writing ingredient specifications, and training personnel on testing procedures. She also manages front-end nutritional workups for regulatory groups.
Over the course of her career, Ms. Bratisax has worked with a number of major food companies, such as the General Foods Corporation, Kraft Foods, UniLever, George Weston Bakeries and Best Foods. She holds a Bachelor of Science in nutrition from Long Island University’s C.W. Post, and an associate degree in food technology and processing from Farmingdale State College. Her professional affiliations include the Institute of Food Technologists and The Association of Official Analytical Chemists.
